Chicken Chow Mein

Noodles are my favorite.  Italian, Asian, any kind will do.  I simply love the darn things.  When I get in the mood for Asian food I always want to recreate a lo mein recipe.  I created this recipe and Collin calls it a "keeper."  

This is a blissfully simple recipe that is easy to whip up on a weeknight especially if you use a store-bought rotisserie chicken - I won't tell if you don't :)

Ingredients:

1 whole rotisserie chicken

2 packages of ramen noodles (discard seasoning packets)

1/4 cup soy sauce

2 tsp brown sugar

2 cloves garlic, minced

1/2 tsp ground ginger

pinch of black pepper

1 tbsp olive oil

1 shallot, diced

1 cup cabbage, chopped

In a small bowl combine soy sauce, brown sugar, garlic, ginger, and black pepper.  Heat skillet with olive oil on medium heat.  Add shallot and saute 2 minutes until slightly soft and beginning to turn brown.  Add cabbage and saute another 2-3 minutes until soft.  Chop up rotisserie chicken and set aside.  Bring 4-5 cups of water to a boil and add ramen noodles.  Cook 3 minutes and then drain.

Add ramen noodles to skillet with shallot and cabbage.  Toss with the soy sauce mixture.  Add chopped chicken and toss until chicken is heated through.  Serve alone or with a steaming bowl of edamame.
